If you're new, read How to run your group. It walks the whole loop once, in order — from setting your defaults through to settling up — and answers most of what people ask before they send their first invite.
The short version
Booki keeps the record. It never touches the money. There are no deposits, no payouts and no payment processing. Your members place their own picks, results grade themselves, and balances update automatically. When your group settles up, you pay each other however you already do — and record it so the balance clears.
